While enjoying spectacular food, guests can sip hand crafted cocktails specifically created for holiday celebrations at StripSteak by Michael Mina and Hakkasan. Try the Goodnight! Goldfinger, Rosé all Day, Champagne all Night and the King of NYE at StripSteak and the When Tom met Ginger and The Berries and the Bees at Hakkasan throughout the month of December.

 

Christmas Dining:

 

·        StripSteak by Michael Mina

Fontainebleau’s newest restaurant is offering Christmas Day brunch for $68 per person, excluding tax and gratuity, from 11 a.m. – 3 p.m. On Christmas Eve and on Christmas Day, the restaurant is offering a three-course holiday-inspired prix-fixe menu priced at $75 per person, excluding tax and gratuity, available from 6 p.m. – 11 p.m. Guests will enjoy a first course ofBeausoliel oysters with Petrossian caviar and a cucumber-ginger mignonette; followed by the main course, pan-roasted duck breast served with applewood smoked bacon, celery root puree, and huckleberry jus. For dessert dinners will enjoy the yule log topped with vanilla cream, cherry jelly, and flourless chocolate sponge.

 

·       Scarpetta

Those seeking a rustic yet elegant holiday meal can indulge in Scarpetta’s three-course prix-fixe menu available on both Christmas Eve and Christmas Day from 6 p.m. – 11 p.m. Priced at $75 per person, excluding tax and gratuity, guests can indulge in Hamachi, local snapper and mussels crudo with ginger, chili, and smoked royal trumpet mushroom as an appetizer, followed by theScarpetta cioppino with cod, prawn, scallop, clam, rapini stufato, and shellfish brodo. For dessert, a ricotta gelato cream puff will be served with warm peppermint chocolate sauce.

 

·        Michael Mina 74

On Christmas Eve and Christmas Day, guests can enjoy a special holiday dinner offered from 6 p.m. – 11 p.m. Supplementary to the a la carte menu, diners can feast upon roasted chestnut soup ($12) with pumpernickel, duck confit, and cinnamon gastriquie, followed by braised short ribs ($32) served with smoked polenta, pearl onion, and a Cabernet Reduction and for dessert a decadent Christmas bread pudding ($9) with pannetone, candied orange, and dark chocolate gelato.

On Christmas Eve and Christmas Day from 5 p.m. – 10 p.m. Vida will offer a full traditional

Christmas dinner buffet

Ring in the New Year with a four-course prix-fixe menu at Fontainebleau’s newest restaurant by celebrity chef Michael Mina, priced at $195 per person, excluding tax and gratuity. From 6 p.m. – 7:30 p.m. dinners can enjoyfingerling potatoes with white asparagus, crispy egg yolk and black truffle; poached halibut with celery root, Brussels leaves and buerre blanc; wood grilled filet mignon with parsnip puree, granny smith apple, horseradish and bordelaise; and a chocolate bar with intense chocolate mousse, yuzu curd and hazelnut crunch.

 

The second seating is from 8:30 p.m. – 10 p.m. with an elevated prix-fixe menu for $295 per person, excluding tax and gratuity. The elevated menu includes fingerling potatoes with white asparagus, crispy egg yolk and freshly shaved black truffles, poached halibut with caviar, celery root, brussles leaves and buerre blanc; wood-grilled filet mignon with seared foie gras, parsnip puree, Granny Smith apple, horseradish and bordelaise; and achocolate bar with intense chocolate mousse, yuzu curd, hazelnut crunch.

Scott Conant’s AAA Four Diamond award-winning restaurant will be offering a delectable four-course prix-fixe menu priced at $195 per person, excluding tax and gratuity. From 6 p.m. – 7:30 p.m. diners can enjoy tuna bresaolawith compressed melon, balsamic and micro basil; a family-style pumpkin raviolini with hazelnuts and amaretti, and spaghetti with tomato & basil. For the main course, diners can choose between dry aged NY strip with lardo potato puree, swiss chard and Barolo reduction or the pan roasted sea scallops with celery root, pickled carrot, chanterelle mushrooms, and truffle reduction. For dessert indulge in the citrus panna cotta with star anise crumble and basil-blackberry sorbet or a Giandujotto dome with chocolate financier and hazelnut gelato.

 

The second seating from 8:00 p.m. – 10 p.m. offers an elevated prix-fixe menu at $295 per person, excluding tax and gratuity. This menu includes a yellowtail hamachi crudo with ginger, chili and caviar; a family style pumpkin raviolini with hazelnuts and amaretti, spaghetti with tomato & basil and duck ravioli with a marsala reduction. For main plates guests can enjoy family style options such as  dry aged NY strip with lardo potato puree, swiss chard and barolo reduction or pan roasted sea scallops with celery root, pickled carrot, chanterelle mushrooms, and truffle reduction. For dessert a choice of citrus panna cotta with star anise crumble and basil-blackberry sorbet or Giandujotto dome, chocolate financier and hazelnut gelato. A vegetarian menu is also available.

·        Michael Mina 74

The chic yet laid back contemporary American bistro will be serving the limited Football menu from 11 a.m. – 4 p.m. and offering a three course prix-fixe for $150 per person, excluding tax and gratuity from 6 p.m. – 11 p.m. The meal will start with a choice of appetizer from options such as peekytoe crab salad with avocado, citrus and petite herbs; roasted beet with Humbolt fog, charred onion and sunflower seeds; or foie torchon with Cherry, pistachio, fresno chili and brioche. Entrée choices include options such as  Atlantic sea bass with cauliflower, sultana and herb emulsion; duck breast with baby carrots, confit ravioli and huckleberry or filet mignon served with duck fat fries and a trio of dipping sauces. For dessert, guests will have a choice of chocolate torte with fresh raspberries and white chocolate frozen espuma, NYE trifle with mandarin jelly, citrus panna cotta, angel food cake and meringue sticks, or beignets made with 18 Year Old Macallan, caramel and chocolate pot de crème. A vegetarian menu is also available.

 

·        Hakkasan

Fontainebleau’s modern Chinese restaurant will be offering two seatings as well. A four-course prix-fixe menu priced at $195 per person, excluding tax and gratuity, is available from 6 p.m. – 7:30 p.m. The feast begins with a family-style dim sum platter with Alaskan crabmeat dumplings, steamed har gar with golden leaf, steamed lobster dumplings and crystal black rice dumplings. The individual appetizer combo includes the crispy duck salad with mango scallops and the family style entrées include the charcoal grill Chilean sea bass with truffle sauce, pan-fried Wagyu beef with black pepper sauce, crispy lobster with eggplant and royal fried rice with spicy conch meat. For dessert, enjoy a milk chocolate mousse, Kalamansi espuma, black tea angel food cake and dark chocolate sorbet.

 

The second seating is from 8:00 p.m. – 10 p.m. with an elevated prix-fixe menu for $295 per person, excluding tax and gratuity. The menu includes shared Crispy tiger prawns with mango, Alaska crab meat siew long bun andsteamed har gar with golden leaf. The individual appetizer is the peking duck with Petrossian caviar. Entrées served family-style include the charcoal grill Chilean sea bass with truffle sauce, pan-fried waygu beef with black pepper sauce, crispy lobster with eggplant, salt and pepper, stir-fried asparagus with mushroom pioppini and royal fried rice with abalone and morel mushroom. For dessert, guests will enjoy a milk chocolate mousse with Kalamansi espuma, black tea angel food cake and dark chocolate sorbet. A vegetarian menu is also available.
